Yellow Curry Blueprint
With a yummy yellow curry paste as a foundation, you can build your own Yellow Curry at home using the veggies and grains you have on hand anytime!
- 1 Tbls Oil (Olive, Avocado, Coconut)
- 2-3 Tbls Yellow Curry Paste
- 2-4 cups Veggies
- 1-2 cups Cubed Protein
- 1/2 cup Coconut Milk
- 1 cup Water
- 1 tsp Fish Sauce
- 1 tsp Sugar
- 1-2 cups Grain or Veggie Base
Add oil to a very large pan over medium heat and add curry paste. Stir to combine and release aromas from curry.
Add protein and cook for a few minutes.
Add veggies and stir to combine all with curry paste.
Add coconut milk, water and cover with lid, cooking 3-5 minutes until meat is done and veggie are slightly tender
Add fish sauce, sugar and stir. Serve over grains or veggie base.
This dish is fast to make and can be made differently every time based on what’s in the cupboards and refrigerator. Also, great to boomerang leftovers into eggs the next day or warm up for a complete lunch!
